The Armenian community established in Aleppo, Syria after 1915 developed a cuisine shaped by the Syrian-Armenian intersection: Armenian kibbeh variants made with bulgur and spiced lamb filling; kebab preparations adapted to Aleppan spicing; and a close commercial relationship with Aleppo pepper, the moderately hot, fruity dried pepper that Armenian traders helped distribute internationally.
