Ghapama is a whole pumpkin hollowed out and filled with rice, dried fruits (raisins, dried apricots, dried plums), walnuts, almonds, honey, and cinnamon, then baked until the flesh softens and the filling sets into a fragrant, sweetened grain dish. It is presented whole at the table and served by cutting wedges that include both pumpkin flesh and filling.
