Harissa is a porridge of slow-cooked wheat and chicken or lamb, reduced over many hours until the grain and meat merge into a thick, congee-like consistency. It is seasoned simply — butter, salt, and sometimes cinnamon — and served at both festive gatherings and church feasts in the Armenian Apostolic calendar.
