Sujuk (also spelled soujouk or soudjouk) is a fermented, air-dried sausage made from ground beef or lamb mixed with garlic, cumin, paprika, fenugreek, and black pepper, packed into natural casings and dried for several weeks. The fermentation process lowers the pH of the meat, contributing to preservation and developing the characteristic tangy, dense texture.
