The tonir is a clay cylinder embedded vertically into the floor or ground, heated by burning wood or dried dung at its base. Bakers stretch lavash dough thin, drape it over a cushioned oval tool called a rabiz, and slap it against the inner clay wall with a quick downward movement. The bread adheres to the wall and peels off in under a minute when baked.
